Cork Oak - Quercus suber
Press a thumb into the trunk of an established cork oak and the bark gives. It is thick, spongy and deeply fissured, the same tissue stripped in sheets in Portugal and Spain for wine corks, and nothing else in an Australian garden has that texture.
Above it sits an evergreen canopy of small dark leaves, faintly toothed, with grey felted undersides that flash when the wind turns them over. The habit is low branched and broadly rounded, closer in outline to a spreading fig than to the upright oaks people expect, and the crown widens considerably with age.
Climate is the deciding factor. Cork oak comes from the western Mediterranean and it is at home in dry summer country: Adelaide, inland Victoria, the western slopes, the Riverina. It is very drought hardy once its roots are down and it holds up on poor stony ground. What it will not tolerate is waterlogging, and it is less comfortable in the humid subtropics. Full sun, deep infrequent watering while it establishes, then largely left to itself. Slow to moderate, so plant it for the long term.
