Persimmon - Dai Dai Maru Astringent Diospyros kaki
Astringent persimmons ask for patience. Dai Dai Maru fruit is unpleasant while firm, full of tannin that grips the tongue, and only becomes sweet once the flesh has collapsed to a soft, jelly like state. Colour on the tree is not the signal to eat, so pick when the fruit has coloured well and ripen it indoors on a tray until it feels like a water balloon.
The tree itself is deciduous, upright while young and broadening with age, carrying big glossy leaves that colour up in autumn before falling and leaving the fruit hanging on bare wood. That bare branch display is half the reason people plant one.
Plant into deep, well drained soil with shelter from strong wind. Persimmon wood is brittle and a heavy crop can tear a limb, so thin fruit on young trees and stake the leader early. Heavy fruit drop in the first few seasons is normal and settles as the tree matures.
