Kaffir Lime - Citrus hystrix
The fruit is not really the point with this one. Makrut lime, still widely sold under the older kaffir lime name, is grown for its leaves: doubled into an hourglass shape, and carrying an aroma nothing else in the citrus family can match, which is why they are indispensable in Thai and Malaysian cooking. The fruit itself is knobbly, thick skinned and nearly dry inside, useful for zest rather than juice.
It makes a compact thorny evergreen shrub, well suited to a large pot on a sunny deck where you can pick a few leaves at a time; regular picking is what keeps it bushy instead of leggy. Full sun, free draining mix and deep watering through summer, with a citrus feed in spring and again in late summer. Since the foliage is the crop, citrus leafminer matters more here than on any other citrus, so watch the soft new flushes and stay with horticultural oil. Gall wasp is the other one to check for in Queensland and northern New South Wales. Frost tender, so choose a warm sheltered spot.

The size shown is the pot the plant arrives in, which is the rootball, not the height of the plant. The smaller pots hold younger plants that cost less each and establish quickly, which suits hedges, screens and mass planting where the plant count adds up. The larger sizes carry several more years of growth on the farm and give height and presence straight away, which is what you want for a single feature position or a screen that cannot wait.
